Dinner for the Lazy

I’m a lucky girl, because both Joe and I love to cook. Having a man that cooks is invaluable. Because no matter how much you love cooking, there will always be that one day where all you want to do after work is get comfortable, eat comfort food, and binge-watch Walking Dead reruns. This was me last Tuesday. Joe told me he wanted to fry up some tofu, and I welcomed this with open arms. What did that mean for me? Lazy dinner.

Lazy dinner, comfort food… call it what you will. This meal took little to no energy and I was able to watch Daryl Dixon in action while I waited for the sweet potatoes to boil.

The Recipe

You will need:

  • 2 small sweet potatoes (or 1 medium/large… whatever you have)
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1/2 cup black beans
  • Paprika
  • Onion powder
  • Chili powder
  • Earth Balance butter
  • Soy milk
  • Salt and pepper

Veggies & Beans

This is the easy part. A little olive oil in a pan. Dump in the peas, corn, and beans. Season to taste with paprika, onion powder, chili powder, salt, and pepper. Low heat until the potatoes are done. Yeah, that’s it. Lazy.

Sweet Potato Mash

Boil the sweet potato until soft. During this time, I was sprawled out across couch with Minnie. This translates to about 20 minutes into a rerun. Once soft, mash up the potato. Add butter, soy milk, salt, and pepper to taste. This probably took the most energy, because I broke out the mixer, but barely.

While this may have seemed like a bunch of random ingredients, it actually went together really well. I felt like I was eating vegan shepherd’s pie, and that made me happy. I also didn’t feel like a glutton when I finished, even while laying on the couch all night. It’s the little things.

  1. Sounds so good! My favorite lazy vegan meal is a can of Amy’s refried beans and whatever frozen veggies I have plus salsa in a pan. Add hot sauce to taste. Serve wrapped in tortillas or over leftover brown rice. Add avocado if you have it. Pretty much a 10 minute meal and it’s comfort food too!

  3. My favorite lazy meal is oatmeal with banana, peanut butter, and unsweetened cocoa powder. I mix the oats with some almond milk, cook in the microwave, then stir in the extras and let it sit covered for a minute or so. It may not be a traditional *dinner* food, but when I really don’t feel like cooking it’s hearty and delicious.
