Pancakes for breakfast, pancakes for dinner… pancakes ALL the time! When I made these, this was totally my dinner. I didn’t even ask Joe because I knew he wouldn’t be down… I just went for it. Because dammit, sometimes you just need
basically dessert pancakes for dinner!
Of course, he came home and made up his own dinner… but that was fine. MORE FOR ME!!
This recipe makes approx 20 pancakes
You will need:
- 1 cup whole wheat flour
- 1/2 cup white flour
- 2 tsp baking powder
- 1 tsp baking soda
- Dash of cinnamon
- Dash of pumpkin spice
- Dash of salt
- 1 cup almond milk (add more if necessary
- 1/2 cup pumpkin puree
- 1/4 cup agave sweetener
- 1 tbs vegetable oil
- Enjoy Life Mini Chocolate Chips
Step 1: Dry Ingredients
All dry ingredients in one bowl.
Step 2: Wet Ingredients
All wet ingredients in a separate bowl – but not for long!
Step 3: Add Wet to Dry
Give it a good mix, to rid of all chunks. Yup, batter is ready to roll!
Step 3: Pancaking
Over medium heat, grease pan and scoop just a bit of batter onto the griddle. Grab those amazing vegan chips and top them off!
These took a little longer to cook than normal pancakes. About 2-3 minutes per side… or until cooked thoroughly. Now, watch that sweet stack groooow!
