Yay – share & swap! We’re excited about our new & lovely blogging friend, Elena! Elena is blogger of Eat Swim Bike and Run, where she shares recipes, races, inspiration, photos, and so much more. Without further adieu, we’ll let her take it away :)
Bianca: Hi Elena! Tell us a little bit about yourself.
Elena: Thanks Bianca and Sara for sharing my blog and interview! I absolutely adore blogging and all things active and healthy! I could read about, write about and talk about this stuff all day long! I’m currently enrolled in the Plant Based Certification course from eCornell and LOVE it. My dream, after completing this course and gaining certification in personal training, is to transition into a job in wellness. I’d love to coach people on how to age well through a holistic approach combining clean, plant based nutrition as well as physical activity!
B: Tell us a little about your blog and how/why you started.
E: My husband and I originally thought we would both blog – kind of take turns – and talk about our journey to a half ironman triathlon. Turns out I like writing better then he does so now the posts are all me! I write about food, training, family and life in general. I also try to include plant based recipes and links to blogs I enjoy!
B: Who or what inspires you?
E: Pushing my limits inspires me. My husband and kids inspire me. Exercise inspires me – any day that starts with a workout is a good day! I’m also incredibly inspired by all the awesome plant based athletes including Brenden Brazier, Rich Roll, Hilary Biscay and others.
B: What is your favorite dish to make?
E: This is a tough one! I’d say a really good stir fry with a ton of fresh veggies. I enjoy experimenting with different ingredients to make the sauce.
B: Any races coming up? Tell us a little about this!
E: I have a half marathon November 8th – it’s Area 13.1 in Roswell (Atlanta area). This is the first time in awhile that I’ve really followed a specific plan for a half marathon – speed work and all – so I’m hoping to PR. Bonus is that this is an evening race – starts at 5:30 – so no waking up at an ungodly hour to run!

Beans & Rice Recipe
- 1C Rice
- 2C water
- 1/2 – 1C Salsa
- 2 cans of black beans (not drained)
- 1 small onion, diced
- 4 oz can of green chills (optional)
- 1/2 – 1C frozen corn
- 3 – 4 Tbl chopped cilantro
- 1 teaspoon sea salt
Combine all ingredients in a crock pot and cook on high for 2-3 hours. You may want to add a bit more water as it cooks depending on the consistency you are looking for. You can serve in a bowl or wrap in a burrito and garnish with guacamole, lettuce, tomatoes – whatever you’d like!
