Vegetables Cashew Cheese Pizza Vegan Recipe

Current obsession: cashew cheese. Honestly, I have never even been a fan of cashews. I think this is because of the fact that I ate an entire tin of cashews at a sleepover in 7th grade. I’m gross. Ever since then, I couldn’t even look a cashew in the eye without wanting to vom. It wasn’t until I jumped on the cashew cheese bandwagon that I realized WOW. THIS SHIT IS GOOD WHEN YOU AREN’T EATING AN ENTIRE TIN AT 3 AM.

I decided to take this relationship to the next level by globbing this cheese onto my usual veggie pizza [and globbing it into my mouth while making it. READ: Some things never change].

No word of a lie, people. I think this cheese is actually better than ricotta – and that says a lot, because this girl is all Italian! Okay, maybe someone who eats cheese will not think so, but hey… I have been deprived over here. And cashew cheese is the realest deal I got. Give me a break. Okay, let’s look at the recipe.

The Recipe

Preheat Oven: 400 F
Cook Time: 20-25 minutes

For pizza, you will need:

  • 1-lb dough (store bought is fine!)
  • Olive oil
  • 2 red peppers, sliced
  • 1 onion, sliced
  • 1/2 cup mushrooms, sliced
  • 1/2 can black olives, sliced
  • 2 cloves garlic, diced
  • To taste: garlic salt, red pepper flakes, oregano, salt, pepper

For cashew cheese:

  • 1 cup cashews, soaked in 3 cups water for at least an hour
  • 1/2 cup water
  • 2 tbs lemon juice
  • Dash of oregano
  • Salt & pepper, to taste

Step 1: Veggie Prep

Slice all veggies, and add to a pan with olive oil and your garlic. EXCEPT OLIVES. You can add these to the pizza after. Sauté veggies until cooked over med-low heat.

Step 2: Dough Prep

Roll out on the counter with some flour to keep from sticking. Add some olive oil to your pizza pan before settling the dough. This is when I drizzle olive oil and add the seasonings as needed (garlic salt, red pepper flakes, oregano, salt, pepper).

When the dough is ready to roll, add your sautéed veggies to it. Add sliced olives, too (or crush them up with your fingers like a lazy b).

Step 3: Cashew Cheese!

In a blender, add all ingredients and blend until smooth. Taste test to make sure it is seasoned well! Once it’s done, simply add globs by the spoonful to your pizza, if you have any left. Heaven.

Before throwing it into the oven, I will drizzle with a bit more olive oil and top with a dash of salt and pepper. Then, bake at 400 F for about 20-25 minutes, or until crust is golden. That’s IT! The result is sinful.
