Major Friday inspo for all you lovelies, right here. Quite possibly the most refreshing lunch ever. It’s green, it’s fast, it’s simple, it’s fresh. Hit up your local farmer’s market to grab these ingredients, and you’re about to feel wholesome as fuck. Happy Friday.
You will need:
- 4-6 collard green leaves
- 1 red pepper, sliced thin and long
- 1 carrot, sliced thin and long
- 1 cup roasted cauliflower (or raw!)
- Red hot pepper flakes, optional
It’s super easy to assemble these bad boys. Add a dollop of tahini onto the leaf, then add your fillings. Drizzle on your mustard, dash of red hot pepper flakes, then roll ’em up!
Now THIS should be the definition of fast food. Ya know, minus the million gazillion calories and fat. You can be super creative with these, too. Add whatever the hell you’d like. Tomatos, cucumber, olives… go veggie crazy. I cannot wait until summer when I can hit up our local farmer’s market for inspiration. Oh, I am praaaaying so bad for warm weather!
