Bounty Bowl

Hey there, veg-heads. I have an easy bounty bowl to inspire your lunch plans. Oh, and chopsticks. I’m always excited for an excuse to use chopsticks… [And couscous and chopsticks may not sound like the best duo, but it worked for me! So put your skills to the test, baby.]

The Recipe

You will need:

  • 1/2 cup couscous, prepared according to package
  • 1 large portobello mushroom, diced
  • 3 tbs balsamic vinegar
  • 1/3 cup pink beans
  • 1/2 cup Italian green beans
  • 1 tbs olive oil
  • 1 clove garlic, minced
  • 1 roasted red pepper (I used pre-roasted from the jar, but feel free to roast your own!)
  • Salt and pepper, to taste

To make:

  • Prepare couscous according to package and set aside
  • In a small bowl, marinade your diced portobello mushroom in balsamic vinegar – let sit for 10 minutes, then sauté in pan over medium heat until cooked
  • In a separate small pan over medium heat, cook pink beans and italian green beans with olive oil and garlic – set aside
  • Last but not least, slice your roasted red pepper (if they aren’t already!)
  • Assemble it all!

Yeah, there are quite a few pans involved, but it is totally worth it. This bounty bowl is wholesome, filling, and bursting with flavor. What’s in your bowl? xx bianca
