Green Goddess Pasta Salad

Springtime is here, according to our glorious weekend, and that means it’s time to switch gears into springtime foods. This green pasta salad is one of my favorite fast dinners (annnnd eating it leftover for lunch all week is awesome, too). My mom would always make broccoli pasta salad while we were growing up, so this is just a variation. More green, more happiness.

I’m serious, though. This literally takes no time at all – so when you are running around the goddamn house like a chicken with your head cut off, trying to find an outfit for today’s family BBQ while deciding what to bring, green goddess to the rescue. No one wants to show up to a party empty-handed… that’s just lame. Just dump those frozen veggies into a large bowl, turn to your bff microwave, and cook some pasta. Then go ahead and finish shaving your legs, because gf, it’s spring now and skipping is just not an option.

Recipe

You will need:

  • 1 box/bag of your favorite pasta (I used brown rice pasta from TJ’s)
  • 1 bag frozen broccoli (or fresh, if you have it on hand)
  • 1 cup frozen peas (or fresh)
  • 1 cup frozen chopped spinach
  • 3 cloves garlic, minced
  • 1/4 – 1/2 cup balsamic vinegar (depends on how much you like)
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • Red hot pepper flakes (optional heat)

To make:

  • Ready for this? Cook the pasta according to package
  • Stick all green veggies in a large bowl (defrost if necessary)
  • Mince your garlic and mix into veggies
  • Add cooked pasta, and dump in the remainder of your ingredients
  • Stir well – add more vinegar/oil, if that is your thing

Yup, you’re done. So get your freshly-shaven legs to that party, lady. xx bianca
