Vegan Romaine Lettuce Smoothie

This gorgeous smoothie has a secret ingredient in it. Can you guess what it is before looking? I bet you can’t.

Say helllloooooo to this romaine lettuce smoothie. Yes, an entire head of romaine lettuce. A lot of people don’t realize how nutritious romaine lettuce really is, probably due to it’s lack of green. It is much lighter in color, but that does not mean it is void of nutrition. In fact, it contains a number of vitamins and minerals. Unlike watered-down iceberg lettuce, this leafy green is packed with the good stuff.

To define good stuff:

  • Vitamin A
  • Vitamin C
  • Vitamin K
  • Folate
  • Molybdenum
  • Dietary fiber
  • Manganese
  • Potassium
  • Biotin
  • Vitamin B1, B2 and V6
  • Copper
  • Iron
  • Omega-3 fatty acids
  • Phosphorus
  • Chromium
  • Magnesium
  • Calcium

That’s a lot of nutrition to get into your morning smoothie. I mean, just ONE head contains 182% RDA of vitamin A – which is more than a carrot. So yes, I do add the entire head to my smoothie. Trust me, it wittles down to nothing.

Recipe

You will need:

  • 1 head lettuce
  • 1/4 cup frozen blueberries
  • 1/2 cup frozen strawberries
  • 1 banana
  • 1 tbs flaxseed oil
  • 1 cup water

That’s it – and you would never realize that there was lettuce in this bad girl. I promise! So if you are new to green smoothies, I suggest starting with romaine lettuce. It’s really packs quite a punch. xx bianca

  1. I was way off–I thought maybe it was black pepper from the little dark specks. :) Romaine is a great ingredient to add to smoothies and is very under-used in general. Great idea!!

  2. Mmm! I just got into the swing of putting spinach in my smoothies. I love the idea of using lettuce. We always have so much left over whenever we buy some.
