Beets, Berries, and Greens

Beets and berries and greens, oh my! I have to be the first to admit – I really do not like beets. I keep trying to like them – in a salad, marinaded, in a smoothie… it’s pretty tough. That earthy taste is not working for me, and I try to mask it as much as I can (because hello, beets are so good for you… not to mention, GORGEOUS). I have to say those… this smoothie was not as bad as I thought it would be. I used a ton of berries to try and mask the flavor, and it did help to some extent.

If you have any recommendations on how to ease your way into falling head over heels for beets, please speak up! I’m thinking adding some pineapple next time – the sweeter, the better, right?


You will need:

  • 1/2 beet
  • 1/2 cup strawberries
  • 1/2 cup blackberries
  • 1/2 cup raspberries
  • 2 Kiwis
  • 1/2 avocado
  • Handful of kale
  • Water

To make:

  • First layer – kiwi, avocado, kale, and a bit of water. Blend and pour into glass.
  • Second layer – beet and berries, baby. Add a bit of water to loosen things up and top off.

  1. I’m a fellow beet hater. I’ve tried them in chocolate cake. Blech! Waste of chocolate. The only way I can stand them is in moderation, mixed into a creamy potato salad with peas and carrots. The potatoes turn pink, which is kind of fun, and timely perhaps for Valentine’s day. :)

  2. Hey! I think you should try just the beet greens in a smoothie… just one or two leaves, so that it is not too beety! Save the beetroot for when you use your juicer for veggie juice. Use 1/4-1/2 a beet with about a pound of carrots and an apple, plus any other additions that you like :)
