Hi friends – I am soo excited to write this post. I’ve been wanting to do something like this for a while, but would always forget to document everything from my day. I think I am finally ready to commit and make this a thing. To be honest, with less than 3 months until the wedding, I thought this would help keep me on track with eating healthy and logging it all. So here’s to hoping it will also help hold me accountable ;)

I may do this once a week or so. I’m always asked, “so what do you eat?” Welp, now you’ll know ;) I hope you guys like this type of stuff… definitely let me know if you are looking forward to this new addition in the comments below.

Breakfast

English muffin with peanut butter is pretty typical for me – mostly because it keeps me full until around 10-10:30 (I eat breakfast around 7:30). I’ve also been on a mango kick (but when am I not, honestly) and this one was especially ripe and sweet. Consider my sweet tooth satisfied first thing in the morning. Not pictured: multivitamin, calcium + vitamin d, and b12 tablet. Water to drink.

Mid-Morning Snack

I’m a fruit freak (you’ll find this out as I start to document) so of course, I had a nectarine and plum for my mid-morning snacks. The nectarine is not pictured because I am an animal and devoured it without thinking – oops. I promise I will get better at remembering! Three servings of fruit already – the day is young, my friends.

Lunch

I’m lucky to work for a company who has their own subsidized cafe – stocked with healthy and veg-friendly options. I usually grab something from the salad bar or build my own sandwich. Above is white bean hummus, roasted eggplant, peppers, onion, lettuce, cucumber, tomato, and banana peppers between whole wheat. It was sooooo good. Love that hummus!! Water to drink.

Pick-Me-Up

I had to run errands at lunch and grabbed a quick iced coffee… it’s like 93 degrees over here this week! A tall vanilla iced coffee with extra coconut milk. My usual would be soy milk, but I have been trying to limit my soy intake. While coconut milk isn’t my favorite plant-based option, it went great with the vanilla. And then I hit up Francesca’s on my way back – weeee!

Dinner

Not a fan of the oven in the summer (like everyone else), so summer rolls are an essential in our home. These rainbow rolls make me happy because not only are they delish, but gorgeous. Enjoyed 3 of these babies on the screened-in porch. Love! I’ll post this specific recipe soon, but check out my other favorite – mango and avocado spring rolls.

Before Bed Snacking

I think 90% of the time, my bedtime snack is air-popped popcorn. I make mine with my whirly-pop with coconut oil. A dash of sea salt and I’m good to go. It’s fast, healthy, and really filling. Getting on the couch – freshly showered, in comfy pajamas, and watching Netflix – is literally what I look forward to at night. With my bowl of popcorn… I am living the dream, man. Hahaha!

So there you have it – this plant-eater’s typical day. I am going to aim to do this more often… I hope that it is inspiring and interesting for you guys! Seriously – let me know. ;)

Have the happiest Friday and a kick-ass weekend. Joe surprised me with a small getaway to Boston (!!!) It’s just for a night, but we’ll be dining at this fancy vegan restaurant in the city… ahh! He knows the way to my heart
