Hi guys!

Just wanted to document another day’s worth of meals. I hope you’re into this new food diary series (I talk about this more in my first post). I love food so much, that I just need to share it all – haha! But seriously, ain’t that the truth.

Plus, I hope it inspires you for your own meal/snack ideas. I try to eat healthy and balanced, but I am far from perfect. No judgement zone here! I hope you’ll share your own daily diaries in the comment section. I love ideas just as much as the next person. <3

Breakfast

So yeah, sometimes I just like a big bowl of veggies for breakfast. Really – I just grab whatever is leftover in the fridge, chop it up, and cook over high heat with olive oil. I also added some turmeric and paprika to this batch. There’s about 1/2 zucchini, 1/2 summer squash, 1 carrot, 1/4 sweet onion, and 1/2 red pepper in this one. Believe it or not, it is filling and you get all the good nutrients into your body first thing in the morning!

To those who follow me on IG and Facebook, these may look familiar. It is actually all the leftover veggies from when I made rainbow summer rolls (recipe coming next week!) Waste NOTHING!

Mid-Morning Snack

This is basically a candy bar to me. Larabars are made with dried fruit and dates – based on the flavor, a few other ingredients. But the thing is… minimal ingredients. Seriously! Like every single one of these fruit and nut bars (all vegan, by the way) have about 10 ingredients or less (give or take). That’s what I love about them. Peanut Butter Chocolate Chip is my absolute favorite. It’s a healthier Reeses. Plus… filling. (Also – took this pic after the fact, because I totally forgot the day of. Forgive me?)

Lunch

Burger bar at work!! This is legit my favorite (aside from pho day). Vegan burger with all the fixin’s – lettuce, tomato, pickle, banana peppers, ketchup, and mustard on a pretzel bun. I meeeeeaannnn… come on. Best day.

Afternoon Snack

Keepin’ it real with some fruit. Not pictured: nectarine. What is with me not being able to capture a nectarine fast enough? I honestly just can’t even wait for it. It’s so good.

Dinner

The Friendly Fig Vegan Food Diary
Lentil salad with 1/2 avocado sprinkled with pink himalayan salt. I am a lentil lover, and this is my faaaavorite way to have them! I’ve shared this recipe in the past – just cooked lentils, veggies, olive oil, balsamic vinegar, and seasoning. It’s refreshing for summer and I make a huge batch to pick on all through the week. It stays great in an airtight container. I actually love this for breakfast sometimes, too! The half avocado is just, you know, necessary. This one was sooo creamy (and no strings)!! Joe had the other half and we talked about how ripe it was for like 10 straight minutes. It was that good. Yay for protein and healthy fats!

Before Bed Snacking

Nothing better (or sweeter) than a big bowl of ripe mango before bed. I wish I could liiiiive off mango!

I really love that I am starting to notice a pattern in my eating habits… which is LOTS OF COLOR. It makes me so happy to eat so many different fruits/veggies of all varieties. Fill your plates up with rainbows, folks! Have a beautiful day :) xx bianca
