“Cheesy” Spinach Pie

It’s a gloomy morning over here, and I wish I didn’t have to get up and get ready for work… I just wanna stay curled up on this couch with my cat forever. It’s definitely one of those days. Now I just realized that the recipe today is actually fitting, because it is definitely a comfort food – mmmm dough.

I grew up eating spinach pie. It’s quick and easy, and a great way for kiddos to get spinach into their diet. Maybe that’s why my mom used to make it for us all the time? We ate spinach pies a lot growing up, and thankfully it is simple to veganize with the help of my favorite cashew cheese.

Spinach is one of my favorite vegetables, even before I started a plant-based diet. More so, it is an awesome source of iron. At 6.43 mg per 1 cup (180g) when cooked, spinach is one of the top leafy greens to include in your diet for a healthy source of iron. I often hear that those looking to adopt a vegan diet worry about iron, so this is just one of the many ways to make sure you get it.

But okay, onto the good green stuff.

The Recipe

Oven: 400 F
Time: 20-25 minutes

You will need:

  • Handful of flour
  • 1 lb dough (I always use pre-made)
  • Cooking spray (I use olive oil)
  • 1 10-oz package frozen spinach, thawed
  • 5 garlic cloves, minced
  • 2-3 tbs olive oil
  • Handful of chopped black olives
  • Dash of garlic powder, salt, and pepper
  • Cashew cheese, recipe HERE

To make:

  • Preheat oven to 400 F.
  • Toss a handful of flour onto a flat surface and roll out dough horizontally. You’ll want it to be tall enough to fill spinach with and close up, and around 12-18 inches long.
  • Line a long baking sheet with foil and coat with cooking spray. Add long piece of dough – I make mine fit on the baking sheet by shaping the dough into a crescent. Set aside.
  • In a small bowl, add spinach, garlic, olive oil, black olives, garlic powder, salt, and pepper. Mix well and then line the dough with the spinach mix.
  • Top the spinach with dollops of cashew cheese, and close up the dough by pulling the excess dough over and pinching it to seal.
  • Spray with cooking spray (or brush with a bit of olive oil) and add a dash of salt.
  • Cook at 400 F for about 20-25 minutes, or until golden on top.
  • Allow to cool before cutting into slices – it will be super hot! Serve.

I hope that these instructions made sense – it can be hard to describe, and now I am wishing I took more pics of the process. I may make again and update this with some images to show you what I mean. Or maybe it does make sense and I am overthinking it? Yes? No? Just let me know!
