Hi friends! I feel like I haven’t wrote one of these posts in a little bit, so here’s a quick update on what I’ve been munching on lately. I really hope these posts serve as inspiration for anyone who is looking to eat more plant-based meals (or making the transition entirely). Definitely let me know if you’re still digging it. I don’t want to bore anyone to death ;)

This “day” is actually from a couple weeks ago… just finally getting around to pulling it all together. I’ll even link to the infamous loaded sweet potato recipe since I shared that just a week or so ago.

Breakfast

Simple and delicious – whole wheat english muffin toasted with peanut butter. I always find that this keeps my belly happy and full. Nothing too crazy, but yummy!

Lunch

Simple lunch at the work cafe – coconut rice with asparagus, roasted red peppers, and olives. Coconut rice and olives seems like a weird combo… but… I was feelin’ it. Side of crisp apple Hint water – my new favorite flavor. It’s like a green Jolly Rancher without all garbage ingredients ;)

Afternoon Pick-Me-Up

Brought my own homemade popcorn (made with coconut oil) and a nectarine. Can’t complain – yay for fiber!

Dinner

Mmmm the best ever. Loaded + Sweet Baked Potato. I was basically melting into the floor with this one… it was so good. And pretty to look at. I highly recommend making it! I shared the recipe last week.

Another sweet plant-based day in the books. I really love everything about what I am putting into my body. It’s something that has truly changed my life for the better (and my taste buds are happy, too). What awesome things have you been eating? xx bianca
