Chipotle Tempeh Tacos Vegan Recipe

Tempeh Tacos with Crispy Brussels Sprouts and Chipotle Cashew Cream

I made these tacos YEARS ago. Not really years. I made them back in May for Cinco de Mayo and never posted the recipe! But I promise you, they are worth the wait. The Brussels sprouts add a great twist on a traditional taco and the chipotle cashew cream is basically heaven. Make a ton of it and keep it in your fridge to add to everything (it’s a great sandwich spread). You will not be disappointed! Continue reading

Vegan Garlic Cashew Dressing

Creamy Garlic Cashew Dressing

Salads, guys. I don’t love ’em. Sure, I’ll have one as a side with a meal (just spring mix and balsamic… John tells me, “That’s not a salad. That’s lettuce.”), but as a main course? Please.

But every so often, I crave a big huge salad piled high with beans and veggies and some sort of protein and nuts and seeds and all the good stuff. And it has to have a creamy dressing. Hey, we all have our weird little requirements. But a vegan creamy dressing that isn’t packed full of preservatives and is actually good is hard to find. I’ve tried them all! So I decided to make my own and it’s so so easy! Goodbye, store-bought.  Continue reading

Vegan Motivation

12 Motivational Images to Get Your Ass in Gear

Confession: This veganism thing is new to me. And hard for me. For a long time I did “Vegan Before 6,” where the majority of what I ate was vegan. Then I decided to make the full switch. And I still slip up sometimes. I’m working on it, but I’m not making myself feel bad about it. I am a work in progress! As Bianca likes to say, “Do the least harm, and the most good.” I love her for that.

I know the torture animals go through for us to have meat, dairy, eggs. I’ve seen the documentaries. I’ve read the articles and looked at the pictures. I’ve texted back and forth with Bianca (And anyone else who will listen. Just ask my saint of a boyfriend and my patient mother.) about the horrors of the dairy industry (I can’t get over mama cows mourning their babies. I can’t.) and the animal testing industry. But sometimes, there’s nothing like a well-designed quote graphic to motivate you, right? Just ask my Pinterest board.

Cruelty-Free Cleaning Products

Favorite Cruelty-Free Cleaning Products

I’ve done pretty well with kind-ing up my makeup bag and medicine cabinet. I’ve got my favorite Everyday Coconut shampoo, Alba conditioner, and dozens of Burt’s Bees lip balms floating around. But when it came to what was under my kitchen sink, I had a harder time. But I’ve been slowly replacing my harsh, animal-tested cleaning products (I mean I love Windex as much as the next but no animals need to suffer for my windows to be streak-free) with much kinder alternatives. Here are a few of my favorites! Continue reading

Baked BBQ Tempeh Vegan Recipe

Baked Barbecue Tempeh Steaks

I love barbecue sauce. Seriously. I could eat anything that’s slathered in barbecue sauce every day for the rest of my life. I have at least 5 bottles in my fridge right now, though I usually prefer to make my own. I had an extra block of tempeh in my fridge and had no idea what to do with it. Finally threw this easy-peasy-weeknight-meal together!  Continue reading

Easy Grilled Veggies

The Easiest Grilled Veggies

Summertime = Grillingtime. They’re one and the same, right? Unfortunately I don’t have a grill, or even any outdoor space. That’s the price I pay for living in an apartment. But a few weeks ago, John and I were pet-sitting and got to say in a house with a beautiful backyard, an amazing view of the Pittsburgh skyline, a pup and two kitties, and most importantly: A GRILL. Literally every meal we had was made on the grill because that’s just how I live my life. Continue reading
