Inspiration overload right here. Another round-up of all the belly-filling, nutritious bowls of food that I have been eating. And you know… vegan donuts. Have you noticed a trend yet? Basically… throw a bunch of veggies, grains, and whatever-else-is-in-the-fridge into a bowl and call it a meal. Works for me!

Happy Friday! Lots going on lately – Joe’s birthday was yesterday (love!) We’ve also started browsing the market for a new house… in no rush to move, but it is definitely exciting to look around! My brother is coming home SO soon for Thanksgiving. Like I said… lots of things – lots of awesome things. Here’s life lately. xx
Time to share my vegan experience at Universal Orlando Studios, Islands of Adventure, and The Wizarding World of Harry Potter! I’ll be blunt and upfront about it – it’s not very vegan-friendly when you compare it to Disney. HOWEVER, it was certainly not impossible for me. I took a few photos of what I ate, and will recap some of the other items I didn’t snap but still enjoyed. Out of any place, Wizarding World was the easiest place to veganize (yay!) And the pumpkin juice was vegan, so all was well with me.
I’ve been eating a plant-based/vegan diet for over 2 1/2 years now. I love that so much. When I stop and think about it, it really does make me step back and realize all the changes that my body has went through, and how crazy it is to think how I used to eat. It is mind-boggling, really! I wanted to share a modest list of some of the changes that happened after I cut out all meat, dairy, and animal-based products. They may seem minor, but not to me! Some are quirky, some are expected… but all have changed how I feel as a human, and for the better.
I’m proud of what my diet and health looks like in this moment vs. me 3 years ago.
I really dig this new format of sharing what I am eating – compiling over the course of a month rather than a structured day. It’s easier for me, and there is a ton to see for you guys :)
Aside from our honeymoon (splurge splurge splurge), I have been really paying attention to my diet lately. I am looking to make some small changes here and there (I kinda always am trying to see what works best for my and how I feel). My mom and I were discussing our eating habits at length recently and we both think it’s time to cut back on the oil we cook with. We’re Italian, so you can imagine how much olive oil we cook with now – literally, it’s on everything. I am also a huge coconut oil advocate – and I’ll still use it to a certain extent… like on my popcorn! – but I do want to also watch my intake and cut back… just to see if I notice any changes or difference in weight/health/etc. We’ll see! I’ll report back if there is anything significant to report. I feel like this oil thing may be harder than when I adopted a vegan diet and gave up cheese!
I also kinda fell off the no-sugar wagon – well, fell off but not as bad as before! For example, I never use sugar in my coffee anymore (huge win for me). I’m also not into the flavor shots anymore, either. Now that the wedding had come and gone and we’re back from the honeymoon, I am ready to commit again and watch my intake. If I do have sweets, it will be something that is totally worth it on the weekend.
I haven’t made up my mind about dates yet – they are loaded with sugar, but… natural sugar? Not sure how I feel yet. Maybe if I am dying for a sweet and losing my mind, I’ll have a date. But… maybe not! I guess we’ll see how I feel. I won’t kill myself over it ;)
Anyways, now that I have rambled on and on about my diet changes as of lately, let’s get to what I have actually been eating. Lots of good stuff (as always!) to inspire.

I’ve finally sorted through, edited, and got around to uploading a ton of photos from our honeymoon. I mean… over 100 photos below the cut. I could go on and on about how incredible our honeymoon was, but I’ll just let the photos do the talking today. I’ll be working on vegan food diary posts for both Disney and Universal (expect them sometime next week!)
It was truly the most magical and blissful week. We took it easy, acted like kids, ate like kings and queens, and really soaked up the fact that we’re married. It was beautiful. xx

I love writing posts about my fashion finds on here! This is one that I was particularly over the moon about. As usual, all my luck with vegan finds are in Marshalls/TJ Maxx/Target. This vegan leather jacket caught my eye in TJ Maxx immediately (before I even saw the clearly marked tag). Once I did, you can only imagine my face. It went straight into the cart.
Because I mean… it was $30.
Happy happy friday, friends! I’m busy with last minute packing and prep for our honeymoon, so here’s an easy last post before we take off for a week – all the cool things I’ve snapped. Hmmm as for updates… Life is so good. Disney is waiting for me. Married life is all that it is cracked up to be. Aaaaand I scheduled out two posts for next week (both of which I had in my drafts forever and debated posting). Hey, might as well see the light of day while I’m away! I hope you enjoy.
