4-Step Veggie & Tofu Scramble

Veggie Tofu Scramble Recipe

One of my favorite breakfast staples as a vegan? A tofu scramble. Not only is it quick and easy, but I’m not hangry an hour after I finish. Just chop and add as many veggies as your heart desires… zero guilt!! I’m excited to share one of my favorite scrambles with you – just four steps!

The 4-Step Recipe

You will need:

  • 1 red pepper (or whichever color you love)
  • 1 yellow onion
  • 1 zucchini
  • 1 yellow summer squash
  • 1 package tofu
  • Curry
  • Paprika
  • Garlic salt
  • Salt & pepper
  • 1 avocado

Step 1: Choose & Chop Veggies

Self explanatory, right? Chop ’em up, add them to your favorite pan, and sauté them real good.

Step 2: Crumble & Add Tofu

Push your veggies to one side of the pan and make some room for your protein. For all those non-vegans who wonder, “but what do you eat for protein?” Bam, here is one example. I use my hands to crumble up the tofu. Season to taste with curry, paprika, garlic salt, salt, and pepper.

Step 3: Stir & Simmer

Mix it around, cover, and allow it to sit for 5-10 minutes. Easy enough, right?

Step 4: Plate & Garnish

Got a favorite plate? Grab it. Mine is my Fiestaware – the best ever (especially the turquoise & lapis). Slice up your avocado and dig in!
