Vegan Snowflake Cake

Remember these bad boys?


I know you do, because who doesn’t? These things were life. If you weren’t aware already, I have a serious marshmallow addiction. I know how horrible marshmallows are for you, but everyone has their vice, right? So these things were right up my alley, and still are. Except NOT VEGAN. UGH. Instead of wallowing in misery, I decided to tackle my own version. And since I didn’t have a snowball-shaped pan and could only find a snowflake mold, I’ve also altered the name. Introducing the Vegan Snowflake Cake.

The Recipe

There are three parts to this recipe, so I will break them down accordingly. The chocolate cake recipe I adapted from Lady and Pups.

Dark Chocolate Cake

Oven: 350 F
Bake Time: 15-20 minutes

You will need:

  • 3 oz of Trader Joe’s Pound Plus 72% dark chocolate (or your choice bar!)
  • 1/3 cup dark chocolate cocoa powder
  • 1/2 cup hot coffee
  • 3/4 cup dark brown sugar
  • 6 tbsp coconut oil
  • 2 tbs ground flaxseed + 6 tbs hot water, mixed
  • 1 tsp white vinegar
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1 pinch of salt

To make:

  • Add your choice of chocolate, cocoa powder, and hot coffee in a large bowl – whisk until melted and set aside to cool for 5 minutes
  • Once cool, whisk in dark brown sugar, coconut oil, flaxseed “egg”, white vinegar, and vanilla
  • Add flour, baking powder, baking soda, and salt to bowl – whisk well
  • Spray your mold and add batter
  • Bake at 350 F for 15-20 minutes, or until evenly baked – set aside to cool

Marshmallow Filling

You will need:

To make:

  • In a sauce pan, add marshmallows, butter, and water – stir over low heat until melted (Note: Keep an eye on this! It WILL burn if you leave it alone)
  • Mix the melted marshmallow mixture with the whipped cream (I always follow the Oh She Glows recipe – it is fool proof!)
  • Once down, cut your snowflake cake in half and add filling
  • Set aside

Buttercream Frosting & Coconut

You will need:

  • 1/2 cup Earth Balance butter, cold
  • 1 1/2 cup confectioners sugar
  • 1 cup shredded coconut flakes

To make:

  • Mix well with hand mixer until combined
  • Frost cake and top with shredded coconut

Ahh… marshmallow goodness.
