Anyone else obsessed with lentils? They are basically nutritional powerhouses for us veg-heads – packed with protein (18 grams in 1 cup!!), high in iron, lowers cholesterol, low in calories, high in fiber, stabilizes blood sugar, prevent constipation, and even helps to reduce the risk of heart disease. Can’t fuck with lentils.
Cook, season, and toss them on a salad for a heart-healthy and happy dish.
I actually just made the “lentil salad” minus the lettuce, tomatoes, and hummus because I was craving. It’s super filling and refreshing as is. I’ll share the recipe below and then you can assemble your salad however you’d like.
The Recipe
You will need:
- 1 cup lentils, cooked according to package
- 3 carrots, diced
- 3 stalks celery, diced
- 1/2 vidalia onion, diced
- 1 tbs olive oil
- 3 tbs balsamic vinegar
- Celery salt, garlic powder, and pepper – to taste
Mix everything up in a bowl and there you have it. You can eat it while it’s still warm or stick it in the fridge for an hour. I like it either way!
To make my big ass lentil salad, I just added romaine lettuce, fresh tomatoes, and my favorite hummus. I chop up my romaine lettuce and add a little olive oil, balsamic vinegar, and a bit of hummus for a light dressing and mix that up with my hands. Assemble and top with lentil salad. OOOOOOhhhhhh it’s good.
It’s a quick and easy go-to when you are starving and need a protein fix.
