Lazy Dinner: Rice Noodle Stir Fry

Rice Noodle Stir Fry Vegan Recipe

Break out the chopsticks, baby. This meal will taste like it took hours to prepare, when it is just a fancy-ass lazy dinner.

The Recipe

You will need:

  • 1 package rice noodles (I use this one from Trader Joe’s) – cooked according to package
  • 1/4 cup unshelled edamame
  • 1/4 cup frozen corn
  • 1/2 cup pea pods
  • 1/2 cup broccoli florets
  • 1/4 onion, sliced
  • 1/2 red pepper, diced
  • 1 carrot, sliced skinny
  • 1 tbs olive oil
  • 1/4 cup soy sauce
  • 2 tbs rice vinegar
  • 3 tbs sesame oil
  • Dash red pepper flakes
  • Salt, to taste

To make:

  • Add all your prepped veggies to a pan with olive oil – cook over med-high heat
  • Once your veggies are cooked, add the soy sauce, rice vinegar, and sesame oil (add more or less of each as you see fit!)
  • Add your cooked rice noodles, turn heat to low, and add your seasonings
  • Serve with chopsticks and be all fancy-shmancy

This dish is super quick, and has quite a burst of flavor. It is one of my favorite quickies! xx bianca
