Sprinkly Sugar Cookies

I almost wanted to call these the #NailedIt Cookies, because that is what they remind me of. So… I need a little practice! I was inspired by this recipe from Salt Tree, but mine are not quite as majestic. Anyways, I still wanted to share this recipe because it was still fun and they came out really tasty!

Also, who doesn’t love a sprinkled cookie? Please.

The Recipe

Oven: 350 F
Cook Time: 8-10 minutes, or until golden brown

You will need:

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 tsp baking soda
  • 1/2 teaspoon salt
  • 1 cup Earth Balance butter
  • 1 1/2 cups cane sugar
  • 2 flax eggs
  • 2 teaspoons vanilla extract
  • 3-5 drops green dye [or whatever color you’d like]
  • Lots and lots of sprinkles

To make:

  • In medium bowl, add flour, baking soda, baking powder, and salt – set aside
  • In a large bowl, cream butter, sugar, flax eggs, vanilla
  • Once smooth, half the wet mix into two separate bowls – add green dye to one, and mix well
  • Gradually add half the dry ingredients to non-dyed wet ingredients, then same for dyed
  • Voila – now you have two sets of dough! Cover in a bowl and refrigerate for at least an hour
  • Hour? Good. Flour your surface and roll out both sets of dough
  • To create the swirl and add sprinkles, just follow the instructions on this image
  • Gently cut into pinwheels, place on your greased cookie sheet, and bake at 350 F for 8-10 minutes
  • Take out, cool, and serve – they are so pretty!

Yeah, these are a little more messy and time-consuming than your average sugar cookie, but if you have no place to be, screw it. They are so pretty to look at!
