Easy Trail Mix

Good morning, friends!

I’m up early and listening to this video of light rain. It’s sunny here (which is good!) but sometimes you just want to listen to the light tapping of rain. That’s me today ;)

Let’s talk trail mix – one of my favorite snacks.

The key to all my trail mix recipe is always chocolate. I feel like trail mix isn’t the same without it. Even though… I am going to try to go sugar-free (aside from fruit) from now until the wedding. Joe’s parents actually inspired me to give it a try. How successful I’ll be… that is TBD. I am nervous, but hey… thank God for fruit! It’s not like I really eat a ton of sugar anyways. I am always a fruit girl first and foremost. I think the only things that I will need to cut out are basically those little squares of dark chocolate before bed and the occasional bowl of cereal before bed. Oh, and my Larabars (I will miss you dearly). I don’t regularly make dessert around here, so that shouldn’t be too hard. Ah, so we will see! I will have to definitely post what I am eating in a day once I do get going. I’ll be checking in with this soon!!

Back to the trail mix. It’s basically just dumping everything into a bowl (the best kind of recipe).

The Recipe

Makes 1 large batch.

You will need:

  • 1/2 cup raw almonds
  • 1/2 cup raw pistachios
  • 1/4 cup pepitas
  • 1/2 cup dried cherries/raisins/cranberries (your preference)
  • 1/2 cup pretzel sticks (I break mine in half)
  • 1/4 cup raw cacao nibs
  • 1/4 cup candy (I chose dark chocolate chips)

Simply add all ingredients into a large bowl and toss together. Store in an airtight container. I find that using mason jars works best for me – it stays for weeks.

Well, I am off to get ready before I fall asleep to this rain video. It is sooo relaxing, right??!
