Hi friends! Another plant-based day entry. Lots of vegetables for this lady, as you’ll see. With summer closing out, my fruit choices will shift – more apples, pears, pomegranates, and grapes for me. Occasionally, I will try to grab mangoes if they look good because I neeeeeed them, but mostly I just get disappointed. Fall, I love love love you above all the rest, but your choice in fruit lacks compared to summer. It’s fine, though. Autumn everything else makes up for it.

Anyways, here’s what I’m noshing on lately.

Breakfast

So, sometimes I eat soup for breakfast. Especially with the arrival of fall – it’s basically all I eat. I really love it – it’s filling and healthy and warms me up! This one is just a hodge-podge of vegetables (some kale, zucchini, onions, mushrooms, I believe) with a turmeric broth. YUM. I also tossed into about 1/4 cup of cooked couscous I had stashed away.

Mid-Morning Snack

A good ‘ol apple with superfood almond butter (I got this in a subscription box – I forget which one, unfortunately. I want to say Vegan Cuts.) I love getting stuff like this… perfect to keep at my desk.

Lunch

This wrap was delicious. Baked tofu with avocado, pickles, lettuce, cucumbers, and mustard. Really filling, too. Also side note – I am obsessed with pickles and mustard together.

Afternoon Snack

Homemade hummus from the work cafe with carrots and celery – nom nom nom. I’m always really excited when they have hummus – it’s SO good here. So bright!

Dinner

The Friendly Fig Vegan Food Diary
More couscous that I had in the fridge (it was the grain of the week in this house… I always make a big batch of something!) and sautéed portobello mushrooms. Just a little bit of olive oil, water, and salt. It’s my go-to.
