Vegan Glow Soup

Hi lovelies!

My new favorite go-to soup… finally getting around to posting this recipe. As I’ve said a zillion times I am sure, I am obsessed with soup. Any soup. Doesn’t matter. It’s pretty much all I eat in the winter. This one in particular has been making my life. I call it glow soup – not only because of the golden color, but because the ingredients will make you glow from the inside out.

I always opt for recipes that warm me up during the cold months, plus nourish from the inside out. Whole ingredients and antioxidant-packed spices. It keeps me feeling healthy, strong, and well. Keeping your skin healthy is important when the weather is harsh!

I’m sharing just some of the benefits, plus the super easy recipe. I start this first thing in the morning while I am still in my pajamas and then have warm soup by lunch. It’s perfect. Plus, this makes a huge batch – like 6 or 8 serving, at least.

But as I was saying – the benefits. Just to name a few…

Carrots: Keep your skin healthy and vibrant due to high vitamin C and antioxidant content. The vitamin C aids the collagen production in the body – hello, skin elasticity.

Sweet Potatoes: Like carrots, its high vitamin C produces collagen to help smooth wrinkles.

Turmeric: Anti-aging at its finest, since it is packed with antioxidants. Plus, that golden color! It glows no matter how you use it. Also, rumor has it that curcumin has shown promise in treating depression.

Broccoli: Packed with vitamin C, beta-carotene, vitamin B, and E = improved complexion by reducing wrinkles and fine lines. It can also help retain skin shine and lighten complexion.

Nutritional Yeast: With a plethora of B vitamins (including B12 – weeee!) this golden powder benefits, hair, skin, and nails.

Olive Oil: Keeps the heart young! A great source of healthy fats.

Seriously – so good, yeah?! If you are sold, here’s the recipe. It’s real easy.

Recipe

You will need:

  • 2 tbs olive oil
  • 5-6 potatoes, diced
  • 3 large carrots, sliced (in this particular batch, I also added a handful of baby carrots that I had!)
  • 1 small sweet potato, skinned and diced
  • 1 cup broccoli florets
  • 1/2 vidalia onion, sliced
  • 6-7 cups water (or until vegetables are just covered in the pot)
  • 1 tbs turmeric
  • 1/2 tbs nutritional yeast
  • 1/2 tsp onion powder
  • Salt and pepper, to taste

To make:

  • Dice up all veggies (potatoes through onions) and place in a large pot with olive oil. Over medium heat, allow to cook for about 3-5 minutes.
  • Add water until vegetables are barely covered. Add the remaining ingredients and turn up to high heat. Once boiling, turn to low and let simmer for about 30-45 minutes.
  • Once done, allow to cool a bit before taking a hand-held immersion blender to it. If you do not have one, you can blend by bullet or food processor. Whatever works best for you! Add more or less water depending on the consistency you’d like.

Quick and easy. Honestly, the pain in the ass part is mostly just chopping vegetables. Luckily, I don’t hate it ;)
