I have sat on this recipe for long enough. I was trying to think what I could post while I am on my wedding high. I came across the above pic while browsing my old photos and thought, yeah this would totally be cool to share!

Full disclosure, the dough recipe is not mine, so I am including a link to what I used below. But the filling and the process is my interpretation, so I hope that it inspires you and possibly makes you a bit less intimidated to make your own ravioli. While time-consuming, it is very easy.

It’s a gloomy morning over here, and I wish I didn’t have to get up and get ready for work… I just wanna stay curled up on this couch with my cat forever. It’s definitely one of those days. Now I just realized that the recipe today is actually fitting, because it is definitely a comfort food – mmmm dough.

I grew up eating spinach pie. It’s quick and easy, and a great way for kiddos to get spinach into their diet. Maybe that’s why my mom used to make it for us all the time? We ate spinach pies a lot growing up, and thankfully it is simple to veganize with the help of my favorite cashew cheese.

My full name is Bianca Scartabello… so, you can imagine how much frittata my crazy Italian family eats. Basically, if you have nothing else to make, just make a quick frittata and call it dinner. So, fast forward to being vegan and I’ve haven’t eaten a frittata in over a year. Which is fine, because the egg industry is fucking disgusting. However, that doesn’t mean we can’t mimic this Italian classic – gf needs to stick to her roots, in the kindest way possible. So, I found this Simply Tofu Quiche recipe over at Minimalist Baker and knew I had to give it a go – with my own twist.

Sweet Onions & “Meatballs” [v.]

Confession: I ate a lot of meatballs in my life before I started eating vegan. I mean… I’m 100% Italian. That’s what I grew up on. Needless to say, I was pretty picky with the fake stuff for a while. Until I went to Target and found Gardein Meatless Meatballs. They DON’T TASTE LIKE CARDBOARD. Hallelujah! In fact, they are bursting with flavor and have a great texture. Even Joe said that these could fool anybody. Maybe not everybody, but I like to think so.

One of my favorite dishes Mom would make growing up was Meatballs, Peppers, and Onions. Perfect as is or in-between your favorite italian bread.

Okay, now for the real reason why I made Green Machine Pesto… this pizza! The pasta was just a bonus for the leftovers, but this pizza is absolutely incredible. I wasn’t quite sure what to do with what I had in the house, so hey, let’s throw it on some dough and call it dinner. Dough + anything = heavenly. I was very happy with how this turned out, and really excited to share!

Plus, it’s stunning, isn’t it? Colorful dinners are the best dinners. And it really hit me that I want all potatoes to be purple. All the time. Why can’t this be the norm?

Vegan Lasagna Recipe

Very Vegan Lasagna

I come from a very big Italian family… so you can imagine how much lasagna & macaroni and gravy I’ve grown up on. My blood type is basically gravy. Since going vegan, I’ve had to modify quite a few family staples! Most recently, I tackled lasagna. No word of a lie, when I took a taste of this dish, I almost melted into the floor. You won’t even miss the ricotta cheese. It tastes the freaking same. I knew it was a hit when Joe kept raving about it into the next day. SCORE!
