Life has been a whirrrrlllllwind over here. I haven’t had much time for structure. I feel like this is the first October that will be a blur for me. It feels like something is going on every week… and really, that is how it is! One week into married life, and I feel like we still have so much to do… well… me. Between name changing and then getting ready for our honeymoon, it’s definitely been hectic over here!!
Instead of a diary of my day, I have just been taking photos of my food and would like to compile it all here. This is basically what I have been eating for the past few weeks. Lots of different meals, foods… you know. Variety is key to not getting bored, amiright? ;)
THERE IS A TON AFTER THE BREAK – just a warning. I love taking pictures of my food, so… you know. I think I may like this way of doing things better, too. I may just do a once a month compilation of everything I’ve eaten. I hope it gives you some insight into my eating habits, as well as ideas for your own diet!
lightly sautéed zucchini and mushrooms with Victoria’s Vegan marinara sauce + cashew cheese. YUM.
at work – barley with roasted cauliflower, sweet potatoes, and brussels sprouts.
grabbed these spicy corn nuts at whole foods on my lunch break – addicted!
whole foods lunch – curry rice, sweet potato and quinoa patty, roasted mushrooms, and grilled zucchini/summer squash. hint water, always!
homemade refried black beans, couscous, and avocado. this is a filling go-to.
morning kick – tall cold brew with extra soy
hummus platter from work – my faaaavorite.
My new favorite at the work café! Lavender Iced Tea Latte with soy milk. It tastes almost like… drinking fruity pebbles. It is sooo refreshing, sweet, and unique. I’m in love!
mexican bowl at work – barley with black beans, salsa, guac, and lettuce.
spicy gravy and macs at my parents’ house – sunday dinner is always the best!

peanut butter on an english – my simple go-to breakfast.
smashed potatoes with a side of chipotle aoili… indulgent, but delicious.
a bowl of spicy mushroom soup (I really need to post this recipe soon!) sorry for the crap quality… it was a late 8 PM dinner… no good lighting in this house!
lunch is red roasted peppers on a bed of spinach with olive oil and a bit of balsamic. pita on the side.
a quick banana + pb almond milk shake as a mid-workday pick-me-up.
veggie + cashew cheese pizza leftovers – yes, I eat my pizza cold! yummm.
pho day is my favorite day at work [!!] piping hot lemongrass and ginger broth loaded with noodles, tofu + crisp veggies, topped with sriracha!
my favorite breakfast ever – tofutti cream cheese with tomatoes on toast!
we went to plum point bistro – they have a ton of vegan options right on the menu… including this pesto + heirloom tomato gnocchi!
the vegan platter from plum point bistro was LOADED!! cashew cream on toast with pickled onions, tapenade, and roasted tomatoes… brussels sprouts… french green beans… salad… and rice pilaf. this was incredible.
my go-to for take-out! steamed broccoli with fresh ginger and nime chow.
joe made homemade corn tortillas! he’s the best – this is why I married him ;) simple filling of pink beans, corn, and red pepper. side of messy avocado.
whole wheat english muffin with trader joe’s vegan cream cheese, avocado, and tomato. this is heaven.
they made baked plantains at work! it made my life – paired with black beans, rice, and guac.
vegan biscuits ‘n gravy – with the beeeeessssst fried mushrooms!!
tofutti cream cheese sandwich with some tomatoes, red pepper, and lettuce. don’t judge – it’s delicious.

african peanut soup from mokka coffeehouse. holy shit.
soy latte for me!
grabbed a tempeh patty breakfast sandwich from keenwah in newport. pretty good!
vegan vanilla donut, fresh orange juice, + soy mocha latte at the grange.
last but not least, enjoying a piece of our wedding cake together in our new finished basement! we had a vegan lemon and buttercream cake from a local shop, silver spoon bakery. YUM!!
