If you are trying to eat more plant-based or go vegan, I know breakfast can be a concern. A lot of people think they will miss their usual egg or omelet, but having a tofu scramble can be just as comforting, hearty, and delicious with the right ingredients and seasoning. It’s a go-to of mine when we make brunch for family and friends.
I love this one in particular because it features tofurky and cashews. The tofurky adds that “meat” component that others might miss, and the cashews are unexpected. I think you’ll enjoy it – vegetarian, vegan, or not!
Recipe
You will need:
- Cooking spray
- 1/2 onion, diced
- 1/4 cup red pepper, diced
- 1 block tofu, crumbled
- 3 slices tofurky, sliced thin (optional protein)
- 1/4 cup raw cashews
- Dash of: salt, pepper, turmeric, paprika
- Handful of spinach
- 1 scallion, sliced
- Avocado (optional)
To make:
- Spray skillet before adding onion and red pepper – cook over medium heat for about 5 min.
- Add crumbled tofu, sliced tofurky, and raw cashews.
- Season with salt, pepper, turmeric, and paprika. Toss everything until coated well – add a bit of water for steam and cover over medium heat, tossing and scraping the bottom of the pan occasionally, for about 15 min.
- Add handful of spinach and toss until wilted.
- Serve with a side of avocado and sliced scallion on top.
So filling, colorful, and completely plant-based. Enjoy! xx bianca
