Oats with a quick chocolate/banana/strawberry smoothie and topped with peanut butter, pecans, strawberry, and coconut flakes. Berry and ginger smoothie.Another day, another smoothie and oats bowl for breakfast. Soy latte love.Cauliflower + cashew mac and cheese with some roasted cauliflower… my new favorite combination.Gardein burger… half bread and half lettuce, lol.Coconut lentil stew with some avocado.Strawberry nice cream with dark chocolate sauce and peanut butter drizzle. The chocolate sauce is just unsweetened dark cocoa and maple syrup with a bit of water to thin out.White bean + veggie soup.More cauliflower mac and cheese.Spaghetti + roasted cabbage.Acai bowl with bananas, strawberries, orange, and coconut flakes.Loaded sweet potato with pinto beans, corn, pepper, tomato, spinach, salsa.Green juice.Mac and cheese. Some cabbage thrown in.Chickpea salad wrap.More green juice – spinach, pear, lemon, water.Slow-cooked pinto beans with some rice and salsa.Roasted cauliflower pasta.More cabbage + pasta.Red roasted peppers tossed with garlic and balsamic vinegar on whole wheat.Roasted balsamic veggies with rice.Smoothie bowl with some warm oats, banana, and chocolate drizzle.Roasted tempeh + veggies with rice.Chocolate oats with blueberries and banana.Mac salad.Same old oats with bananas and berries.Tofutti cream cheese and avocado toast.Burrito bowl!Red lentil and kidney bean chili, broccoli, and rice. Drizzle of vegan sour cream.Chunky pb toast and dates.
