Plant-Based Meal Ideas: What I've Been Eating Lately

Good morning, friends!

If you’ve been here a while, you know how often I enjoy my jammy berries. I like to have them on oatmeal, pancakes, mug cakes, etc. They just add a special something to my breakfast.

This is a simple recipe, but to be honest, the goal of this blog is to never be complicated. Many of us just simply don’t have the time or energy to spend too much time food prepping and cooking meals for our families. So here is an easy way to ramp up your breakfast and get in some antioxidants.

Also, anything goes for the berries. I tend to use frozen strawberries and blueberries, but I also enjoy raspberries and blackberries if I have them on hand.


Recipe

You will need:

  • 1 cup frozen strawberries, roughly chopped
  • 1 cup frozen blueberries
  • 1 tbsp maple syrup
  • 3 tbsp water
  • 1/2 tbsp cornstarch (add a bit of warm water to dissolve before adding)
  • Squeeze of lemon juice

To make:

  • In a sauce pan, add all ingredients and give a quick stir.
  • Place over medium heat and cook until it begins to bubble. Once bubbling, turn down head to low and let simmer for 5-10 minutes.
  • Remove from heat and allow to cool a bit before topping oats.
  • Store extra in air-tight container in fridge.

I have used this recipe to also top some soy vanilla ice cream and it was soooo delicious. Very versatile and adds something special. I hope you guys enjoy the simplicity of it. xx bianca
