So excited to share this recipe with you guys! I may have a newborn but that isn’t gonna stop me from making some of my favorite Christmas cookies. I wait all year for this.
Peanut butter blossoms were my favorite growing up and I am happy to have veganized them to my liking. They may not look as “blossom-y” without the kiss candy, but dark chocolate tastes waaaay better. I am not in it for presentation, anyways. I just want to keep these all to myself. (JK kinda, I’ll totally share and put out at holiday dinners).
Whether you are vegan or are transitioning and need a good replacement recipe to make your holiday brighter, this is the recipe for you. They are in no way healthy or try to be something they are not. It’s an indulgent cookie and I won’t even apologize for it because… Christmas! I hope that you enjoy it as much as our family does.
Recipe
- Oven: 350 F
- Bake Time: 12-15 minutes
You will need:
- 1/2 cup vegan butter, softened
- 1/2 cup peanut butter
- 1/2 cup cane sugar
- 1/2 cup brown sugar
- 1 flax egg or egg replacer
- 1 tsp vanilla
- 1 3/4 cup flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 cup cane sugar (in a small separate bowl)
- Dark chocolate of your choice (I like Trader Joe’s Pound Plus dark chocolate, cut up into chunks/shards)
To make:
- In a large bowl, cream together vegan butter and peanut butter. Gradually add cane sugar and brown sugar and continue to beat well.
- Add flax egg/egg replacer and vanilla and beat until well incorporated.
- Add flour, baking soda, and salt to wet mix and mix until dough forms.
- Shape dough into round balls and roll into small bowl of sugar before lining your cookie sheet.
- Bake at 350 F for about 8-10 minutes.
- While cookies are baking, cut up your dark chocolate roughly. Small chunks are good.
- Once cookies are done, take out of oven, top with a dark chocolate chunk, and bake for another 2-5 minutes, or until brown.
- Once out of oven, allow chocolate to set and and cool. Enjoy!
