What I Eat As A Nursing Vegan Mom (Postpartum Meal Ideas!)
Hi friends! Another round-up of what I have been eating. I’m not going to lie – a whole lot of pasta dishes. Not only is it filling, but it is easy for me to toss together dishes like this while I am strapped for time (or have a baby strapped to me, either or).
I am exclusively pumping for my daughter, so my appetite is definitely large and I am not limiting myself. Need that energy and those calories! I hope some of these meals give you a bit of inspiration in your own kitchen. Enjoy! xo
Chocolate chip oat pancakes.Hearty lentil and potato stew.Bean and cheese enchiladas for dinner with a side of spanish rice.Tofu and roasted veggie burrito. Some beans, vegan cashew cream, and salsa, too.Cinnamon and coconut sugar oats with banana and raisins.Baked apples stuffed with dried cranberries, dates, raisins, cinnamon, and coconut sugar.Veggie and chickpea spaghetti with olive oil, garlic, and lemon juice – soooo good.Kale salad with dried fruit and nuts. Tahini & lemon dressing.Soy capp.Lentil, rice, and veggie stew.Zucchini and spinach tofu quiche with a side of roasted veggies.Baked potatoes, broccoli, and some cashew cream.Cashew cheese pasta with broccoli.Black bean bowl – some rice, corn, salsa, and vegan cheese.Red pepper & zucchini tofu scramble with an english muffin.Spaghetti with diced tomatoes, onions, chickpeas, olives.
