I really never thought I’d be eating a vegan omelet when I changed my diet over 5 years ago. But here we are!
Chickpea flour is a great egg substitute for this kind of savory stuff. I love it as a breakfast sandwich best, but this omelet is a very close second. It whips up in a snap and is extremely satisfying. I hope you agree.
Recipe
You will need:
- 1/4 cup chickpea flour
- 1 tbsp nutritional yeast
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Pinch of salt and pepper
- 1/3 cup water
- Veggies of your choice (I went with peppers & onions)
- 1 tbsp olive oil
- Pinch of thyme
- Vegan cheese
To make:
- In a small bowl, whisk together chickpea flour, nutritional yeast, garlic powder, onion powder, salt, pepper, and water.
- In a small pan over medium heat, add your veggies, olive oil, and thyme. Sauté until tender.
- While veggies are cooking down, heat a non-stick skillet to medium heat and pour chickpea mix so it resembles a large pancake. Cook for about 3 minutes per side.
- Once done, turn heat down to low, add vegan cheese and veggie filling, fold over, and cover to allow cheese to melt.
- Serve!
That’s all there is to it. A great plant-based breakfast without the eggs. x
