Any fans of the JUST Egg here? I have to say that it grew on me a lot and we buy it maybe once a month or so because Willow really enjoys it, too. It has come down in price since its inception (thankfully because it was way overpriced before) but to some, it still isn’t worth it for a serving or two.
I found that when I scrambled it, so much got stuck to the bottom of the pan and it made much less than expected. And that was annoying. SO instead, I have started to make it this way instead and it lasts much longer and goes much further, to be honest.
I bake, cut into squares, and then use one or two at a time to eat as is or as a breakfast sandwich. I store the rest in the fridge for the week and also stored in freezer for later use (and it was still decent!) If you haven’t tried this in the past, I highly recommend giving it a go.
JUST Egg Hack
- Oven: 350 F
- Cook Time: 30-40 minutes
You will need:
- JUST Egg container
- Salt and pepper, to taste
Instructions:
- Preheat oven to 350 F.
- Pour JUST Egg into a small sheet pan (I use an 8×8) and season with salt and pepper.
- Stick in the oven for about 30-40 minutes, or until it is cooked through. I check it around the 30 min mark but usually end up going the full 40 minutes.
- Slice into squares and use as is, as your breakfast sandwich base, etc.
It’s that simple, friends. I love having mine on an english muffin with some vegan cheese, avocado, and spinach. Willow likes hers as is with some avocado mixed in. The options are endless, but just some ideas.
