Plant-Based Meal Ideas: What I’ve Been Eating Lately
Hi friends! Here’s a look at what I have been eating lately. x
Oats with ground flax, cinnamon, and peanut butter.Roasted veggies, baked tofu sticks with nooch, brown rice, and guac.Cantaloupe for snack.Lentil, veggie, and rice soup.Tofu scramble, sprouted toast, and strawberries.Aglio e olio for dinner… SO SIMPLE AND GOOD!Bean, corn, and cheese enchilada topped with guac, lettuce, salsa, and cashew yogurt. And always hot sauce.Just egg sandwich with vegan cheese, guac, and hot sauce.Roasted veggies with a maple mustard drizzle. I ate this for breakfast and it was SO satisfying.Vegan fast food with my husband… omg. I want it now. We shared a double bean patty burger, buffalo tofu sandwich, and tofu nuggets. There’s some fries nearby, too.Chickpea egg on toast with some spinach, guac, vegan cheese, and hot sauce.More roasted veggies with maple mustard and brown rice.Lentil pasta tossed with roasted vegetables that I had leftover, avocado, and sriracha.Kale salad with pumpkin seeds, chia, raisins, carrots, avocado, and a lemon cashew dressing.Blueberry snack for me and the girls.Can you tell I have been on a roasted veggie and maple mustard kick? Some tofu, brown rice, and avocado, too.Brown rice and lentils with roasted sweet potatoes and avocado.
