I’m excited to share the recipe for our very favorite blueberry pancakes. I would say we eat pancakes for breakfast 3ish days out of the week. I like to double the batch and freeze the leftovers so when my kids want pancakes, I have a reserve to pull from. I do this every Sunday morning and it makes me so happy. My girls love to help and watch the Sunday pancake routine.
My favorite part of this recipe is the use of oat and chickpea flour vs. white flour. The oat flour has a plethora of nutrients that you normally wouldn’t get out of white flour and the chickpea flour is packed with iron, which little ones need a whole lot of in their diets. Kicking off the day with an iron-rich meal relaxes my mama heart (especially because my 2-yo is going through a very picky stage).
When I first started using chickpea flour I was skeptic because the smell is not the greatest straight out of the bag. I was initially turned off, to be honest. However, I promise you that it does not translate into the taste or the smell after they are cooked. I hope this doesn’t put you off! I just wanted to be honest because I almost didn’t use it at first. So if you are like me and funny about smells, I hope this will encourage you to give it a try. Enjoy. x
Recipe
You will need:
- 1 cup oat flour
- 1 cup chickpea flour
- 1 tbsp baking powder
- 2 tbsp coconut sugar
- 2 tbsp ground flax
- 1/2 tsp salt
- 2 cups almond or soy milk (possibly more if you prefer a runnier batter)
- 1 tbsp apple cider vinegar
- Frozen or fresh blueberries
To make:
- In a large bowl, add oat flour, chickpea flour, baking powder, coconut sugar, ground flax, and salt. Whisk until combined.
- Add non-dairy milk and apple cider vinegar and stir well until there are no lumps or dry spots.
- Let batter sit for about 5 minutes.
- Heat up a non-stick griddle (or use a non-stick spray) and pour out a bit of batter. Top with blueberries
- Turn heat down to medium. Wait until the batter bubbles a bit, then flip with a spatula (about 2-3 minutes).
- Allow other side to cook for another 2-3 minutes. Take off griddle and plate.
- Continue to do this until batter is done.
