Here is a photo diary of all the meals I’ve eaten during my last trimester (during both my pregnancies).
Spinach salad for days.Couscous salad + hummus for lunch. I’m on a hummus kick for sure.Blueberry + cacao smoothie has been my go-to lately. Love the color!Crazy veggie + hummus wrap from Pick Pockets.English muffin with fig spread.Mango coconut curry – this recipe is definitely in the archives, so feel free to search! So sweet and delicious.There’s a tofurkey dog under all that…Mango, corn, and avocado tacoooooos!Toast + potatoes + iced tea.Avo + lime on toast!White bean alfredo sauce on pasta – carbing up before my 3-hour glucose test (doctor’s orders!)The dreamiest and creamiest avocado for breakfast.Cream of mushroom pastaaaaaa. Carb loading still.Takeout! A little bit of this and that – avocado nime chow, general tso tofu, rice, and vegan singapore noodles.Sweet potato, rice, and bean tacos under all that veggie goodness!Blueberry smoothies are effortlessly gorgeous.Smoothie life – banana, strawberry, cacao, canned coconut milk, and pb.Huge kale salad with walnuts, carrots, tomatoes, and golden raisins. Lemon tahini dressing!All my pregnant prayers have been answered.Sometimes I think that 50% of my food pics are smoothies. I don’t hate it.1/2 everything bagel with Earth Balance.Coleslaw from my mom – mmm have been craving this a lot lately.Cauliflower, spinach, red peppers, avocado… just whatever else. YUM.Simple stuff for dinner – sautéed cabbage, mushrooms, and couscous.I’m digging all the purple smoothies lately!No toast, no problem. GF waffles, pb, granola, and cinnamon.Roasted eggplant, peppers, and hummus wrap.When you can’t decide on lunch… just get a little of everything. Black bean soup, sweet potato fries, veggies + hummus!Refried bean bowl with some couscous, lettuce, pickled onions, and lime.Homemade pesto penne!Fancy date night with my love – this is pistachio pesto with tomatoes. IT WAS TO DIE FOR.Lentil balls with hummus and apple chutney for our appetizer.Frozen banana, berries, almond milk, unsweetened cocoa powder + pb smoothie bowl, topped with some coconut flakes.Mmmmm marinaded tempeh.New day, same smoothie bowl. This time, topped with frozen blueberries, cacao nibs, and coconut flakes.Avocado toast with some leftover marinaded tempeh strips. YUM.PB on whole wheat english with a side of vanilla almond milk. Ice cubes, obviously.When your husband asks for vegan mac + cheese for dinner, you do it. No questions asked!Vegan tacos all day everyday. These are black bean, corn, avocado, and ranch tacos. I am definitely going to share this recipe soon.Tomato salad with lots of fresh basil and garlic, side of crusty bread (no, I didn’t eat the whole loaf but… I could have. LOL. Also, looks so pretty all together). Fried squash flowers!! xoAnother morning, another soy mocha latte.Smoothie packed with blueberries, cherries, banana, walnuts, flax, soy yogurt, spinach, and ripple milk.Mango and avocado rolls with spicy peanut sauce.My husband made this baked ziti with vegan beefless crumbles and vegan mozz. It came out so good! He’s great in the kitchen.I don’t remember what was in this smoothie, but probably banana, berries, spinach, and cocoa powder… or something along those lines.Eggless spinach and zucchini quiche with a side of jammy toast.Vegan alfredo pasta with some broccoli.Bean & vegan cheese quesadilla with some sides.Homemade roasted red pepper & chickpea burgers.Broccoli rabe pasta... again.Smoothie with: banana, strawberries, spinach, unsweetened cocoa powder, coconut milk, and peanut butter (or almond butter? I can’t remember.)Baked sweet potato topped with corn, gardein beefless crumbles, and a quick cashew sour cream. These meals are the most satisfying these days!Simple almond butter toast. Not every breakfast is glamorous!Chickpea and sweet potato curry with rice. Give me all the Indian food this pregnancy.Snacking on lemon dill cashew dip with veggies.Butternut squash – my favorite veggie of autumn!! So excited to eat this every single week. I kid you not.
