Happy October 1st!! The best month ever! To celebrate this further, I got a real good recipe for you.
Joe and I have made a habit out of visiting B.F. Clyde’s Cider Mill in the fall for one reason: CIDER DONUTS! They are melt-in-your-mouth good. Since I’ve adopted a vegan lifestyle, those delicious donuts are not on the menu for me. So, instead of being jealous while Joe eats cider donuts, I decided to make my own! And yeah, they are incredible.
So go out and buy a donut pan, throw on some comfy sweats, and get to baking.
I adapted this recipe from My Darling Vegan (thanks for the inspiration)!
The Recipe
Oven: 350 F
Time: 8-10 minutes
Makes: 6 donuts
You will need:
- 1/2 cup all purpose flour
- 1/2 cup whole wheat flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- 1/8 tsp ginger
- 1/2 tsp salt
- 1/3 cup maple syrup
- 1/4 cup apple cider
- 1/4 cup apple sauce
- 1 tbsp coconut oil – melted
- 1 tsp vanilla extract
- Extra cinnamon and sugar for coating
Step 1: Add Dry Ingredients
Add and mix all 8 dry ingredients in a large bowl.
Add Wet Ingredients
Add and mix the wet ingredients. Add to dry, and mix with spoon.
Step 3: Pan Up & Bake
Spray pan with cooking oil first. The mix is not going to be like your normal wet batter… it is actually pretty fluffy. It may seem hard to work with, but you’ll get it. I used my fingers a ton, not gonna lie. Hey, might as well be honest, right?
Bake these babies at 350 F for 8-10 minutes, or until fluffy with a bounce.
Take Out & Shake ‘Em Up!
Gorgeous, right? They are about to get even sexier. In a trusty Trader Joe’s brown bag, I added cinnamon and sugar.
Toss the donuts in while their hot and coat.
Oh my gosh, eat while hot!! Seriously, these are so easy to make! Two bowls, minor clean-up, big flavor. This recipe makes 6 donuts, so you may want to double or triple if you are having guests.
