Vegan Pasta e Ceci - Pasta with Chickpeas

Hi friends :)

It’s been nice over here lately. Days spent with my Willow, cooking in between her naps, watching some Netflix (and lots of Disney movies with her!) But I am definitely looking forward to better weather.

This is a simple dish, and really inexpensive. For me it’s like… pasta, 99 cents for a box. Can of tomato paste runs about 30 cents here. Chickpeas, about 60 cents. Garlic and onion… literally pennies. For such a hearty dish, it only runs you a couple dollars for the whole thing, and literally cents per serving. I love a good budget meal.


Recipe

You will need:

  • 3 tbs olive oil
  • 3 cloves garlic, minced
  • 1 small vidalia onion, sliced thin
  • 1 6-oz can tomato paste
  • 5 tomato paste cans of water (yes, I just used the same can)
  • 1 can chickpeas (drain first)
  • Dash of red pepper flakes
  • Salt and pepper, to taste
  • Pasta of your choice (I like elbows best, but it is also great with spaghetti!)

To make:

  • In a pan over medium heat, warm up olive oil, then add minced garlic and onion. Allow to cook until fragrant and soft (about 2-3 minutes).
  • Add 1 small can of tomato paste then 5 cans of water (I use the same can to make it easy). Stir well so it isn’t lumpy.
  • Drain a can of chickpeas and add to sauce, along with spices: red pepper flakes, salt, and pepper (all to taste).
  • Allow sauce to simmer for about 20-25 minutes.
  • Meanwhile, prepare pasta and add to the sauce when done.
  • Toss gently and serve!

I added a bit of vegan parmesan cheese to mine for extra flavor, but it isn’t required. I hope you enjoy. xx bianca
