Enjoy. xx Oh, and as always, follow along on Instagram for plant-based food inspiration! steamed cauliflower with salt – simple, but filling! spicy paprika kale chips – om nom. greens + beans. red thai curry, brown rice, and avocado. also, I ate this for breakfast. veggie spring rolls for dinner – stuffed with brown rice, avocado, carrot, snap peas, peanuts, and lettuce. side of sweet peanut sauce. black beans, rice + avocado for breakfast. cinnamon apple oatmeal + pb. romaine salad for me with shredded carrots, walnuts, black beans, a handful of corn, and tofu. I use balsamic vinegar only for dressing. more veggie roll goodness – these were smothered in tahini… so good! vegan fried rice at our favorite japanese place veggie + peanut rolls almond latte to power through work yellow lentil dal + brown rice. peanut butter toast + grapefruit for breakfast! sweet potato + spinach with tahini drizzle. ezekiel toast topped with peanut butter, frozen blueberries + chia seeds. chocolate banana oat smoothie (1/4 cup rolled oats makes it extra filling!) another veggie and tofu stir-fry for me. tofu scrambled loaded with veggies, cashew cream, and turmeric. I shared this recipe a while back, just search “tofu scramble” avocado toast topped with coconut flakes, strawberries + chia. chocolate overnight oats topped with banana – yum! avocado nime chow + thin noodles for me – my favorite japanese take out. overnight oats smothered in peanut butter and a handful of coconut chips. crazy burger brunch! I had the poco loco hash + english muffin. turmeric tofu scramble + 1/2 avocado. freekeh, beans, and avocado… simple lunch. peppermint tea coconut overnight oats – the taste kinda reminds me of rice krispy treats cereal (remember that?!) jasmine green. loaded toast + tea for my mom and me.
