Hi loves! I started compiling these meals at the tail-end of my pregnancy, but there are also some post-baby meals in here. I’m so fortunate to have amazing family and friends to bring over lots of meals while we got through the first week with a newborn. Thank God, right? Because I am STARVING. Breastfeeding is no joke. Lots of plant-based/vegan food inspiration below the cut!

Iced soy mocha as a little treat.
White bean salad sandwich with lots of spinach – recipe for this is in the blog archives. Search “white bean salad” :)
Brunch with my husband – I had a vegan lemon poppy + rosemary bread with a mocha. He had a vegan garlic knot with nitro coffee. Mmmm.
Grilled cheese made with Follow Your Heart.
Veggie burger with homemade honey mustard + fries for lunch.
Finally tried the Beyond Meat burger. I’ll admit, I prefer veggie burgers but this is definitely a great alternative. It tastes great and really does feel like meat. Save a cow and eat these instead, people!
Balsamic tempeh with a side of honey mustard.
Chocolate pudding made with silken tofu.
Tofutti cream cheese toast with cukes + everything bagel seasoning.
Labor day cookout! Sautéed pepper sandwich, corn, broccoli rabe, and mac salad.
Nourished by plants always. Just a simple rice bowl with lentils, broccoli, lettuce, and lemon.
PB + jam on english. Glass of almond milk + ice (my favorite).
Made apple pie after apple picking.
Quesadilla with refried black beans, corn, onion + queso. Side of vegan sour cream + lots of lettuce.
Mango is life [!!]
Rice bowl with steamed sweet potatoes, refried beans, and some tahini. Sprinkle of paprika.
Tofutti toast with tomato, hot sauce, and everything bagel seeds.
Chocolate, banana, peanut butter, dates.
Just waiting on this baby girl… soaking up the sun and eating all the mangos.

Aaaand post-baby time! My mom brought over 10+ homemade meals for us because she’s the BEST. Such a help!! This is just a hodge podge of some squash, couscous with spinach, and kale and beans. I was indecisive.
MIL brought over falafel + tabbouleh! Some couscous and hummus, too.
Mom’s lentil soup.
I made broccoli cheddar soup for Joe and I – it was the most “normal” thing I did all week. Yay for normalcy!
When you’re too tired to do dishes, just add everything you want to the container one of the meals came in. Squash, couscous, peppers, and mushrooms.
Smoothie to help with lactation – will be sharing this recipe!
Some peppers, mushrooms, garlic, olive oil + a side of bread.
Falafel, roasted red peppers, avocado, and hummus!
Chocolate almond butter spread on toast, topped with chia.
Couscous tossed with spinach, onion, and peas. Side of avocado.
Macaroni with a chickpea marinara – made by my Grandma!
Quickly baked some chocolate chip pumpkin bread while baby girl was napping. Great way to kick off fall! This recipe is in the blog archives – search “pumpkin” :)
