Dark Chocolate Cherry Oats (Vegan)

Good morning, friends!

Those of you who follow me on IG know that this is my go-to breakfast. I eat this 5 out of 7 days a week, and I am still not bored of it. It just feels like dessert for breakfast every day, and I love that feeling. Especially when it is sugar-free and chocolately.

I know oatmeal is pretty easy to make, but I wanted to just share how I prepare and prefer mine. I post this breakfast on IG literally every week but never shared it here… so finally, here it is.


Just a note to start – you can prepare your oats in the microwave if you are short on time or just lazy (like me)… or you can make on the stovetop.

Recipe

You will need:

  • 1/2 cup rolled oats
  • 1/2 cup water
  • 1/2 cup almond milk
  • 2-3 pitted dates
  • 1 tbs unsweetened dark cocoa powder
  • 1/2 cup frozen cherries
  • Optional: banana, chopped strawberries, almond butter

To make:

  • In a deep bowl (to avoid spilling over while cooking in microwave), add 1/2 cups oats, 1/2 cup water, and 1/2 cup almond milk. Place in microwave and cook for 2 minutes. Let sit for 1 minute when done.
  • While those are cooking, add your pitted dates to a blender/bullet with a splash of water and run until smooth syrup. Add more water if necessary.
  • Take oats out of microwave and add date syrup and cocoa powder. Stir well.
  • Top with frozen cherries… and possibly banana, strawberries, and almond butter if you’d like!

Some days I just want cherries, and other days I am loading up on fruit and nut butter. Use whatever you have available to you!

I haven’t strayed from this breakfast for over 3 months… I just love it that much. And believe it or not, it doesn’t get boring!
