I shared a photo of these babies on my IG a while back and a lot of you wanted the recipe. It’s too good to not share! Refined sugar-free, no gluten, no dairy. As rich and decadent as they look, they are honestly a really healthy stack.
I made them in under 15 minutes, too. That’s always a plus.
This recipe is for a personal stack of pancakes (makes about 6-8 pancakes) so double or triple as you deem necessary
Recipe
You will need:
- 1/2 cup rolled oats
- 1/2 banana
- 1/2 cup water
- 1 tbs flaxseed
- Dash of cinnamon
Option chocolate sauce:
- 1-2 tbs unsweetened cocoa powder
- 1 tbs pure maple syrup
To make:
- Add all ingredients to your blender/bullet and run until smooth.
- Heat up a non-stick griddle (or use a non-stick spray) and pour out a bit of batter. Turn heat down to medium. Wait until the batter bubbles a bit, then flip with a spatula (about 2-3 minutes).
- Allow other side to cook for another 2-3 minutes. Take off griddle and plate.
- Continue to do this until batter is done and you have a stack of pancakes.
- To make chocolate sauce, simply stir together unsweetened cocoa powder and maple syrup until smooth.
- Add additional fruit toppings if you please (I like banana and raspberries)
- Top, drizzle, and enjoy.
Both Willow and I enjoy these so much. She eats them pretty much every morning for breakfast (sans the chocolate sauce for now). I hope that you and your family enjoy them as much as we do.
