Vegan Pregnancy Meals: What I’ve Been Eating in Third Trimester

Baked chocolate oats with a gooey peanut butter center.Cashew mac and cheese with broccoli and some gardein chik’n.Broccoli rabe pasta. My go-to these days!Garlicky kale like crazy lately. So refreshing and packed with iron.Oats with almond butter and frozen cherries.Quinoa topped with veggies and tahini for breakfast. Quinoa and broccoli rabe.Homemade coleslaw.Tofu scramble and a side of toast with butter and jam. I’ve been loving tofu scrambles as a big source of iron first thing in the morning. So important!Mango, avocado, cucumber, carrots, lettuce… all rolled up nicely with a spicy peanut sauce. My favorite. Recipe here.Vegan mocha latte.Mango curry and rice on date night!Tofu summer rolls with mango, strawberries, lettuce, and carrots. Spicy peanut dipping sauce.Garlicky broccoli rabe.Vegan mocha latte and croissant. YUM.Tofu, spinach, and mushroom quiche with a side of berries and avocado with hot sauce.Another day, another summer roll.Bagel breakfast date! Mine had vegan cream cheese and tomatoes.Pizza night! Mine is the top one… loaded up with some onions, banana peppers, olives, mushrooms, and soy chorizo.Lentil stew, rice, avocado.Butternut squash and rabe. Random and DELICIOUS.Steamed green beans for snack.Toast with earth balance and jam.
