I used Loving It Vegan’s recipe – soooo good!!Mexican salad with some really burnt tortilla chips (oops), liquid red beans, lettuce, avocado, corn, unsweetened cashew yogurt, and hot sauce.Mushroom, barley, and lentil stew!Tofu scramble breakfast sandwich with some vegan cheese, cashew cream, avocado, and sriracha.Stuffed artichoke.Cream of wheat with cinnamon, soy milk, and banana. This is such a great change from my usual oats and is packed with iron.Chickpea egg breakfast sandwich with hot sauce, lettuce, and the remaining vegan bleu cheese… omg. SO GOOD.Pumpkin mac & cheese. This one pot recipe from In My Bowl is TO DIE FOR. I veganized it with almond milk and vegan parmesan.Oats with cinnamon apples.Potato and pinto bean taco night.Pumpkin lentil stew with lots of veggies and kale.Jammy berry oats.Brown rice, lentils, sweet potato mash, broccoli, and guac. Random lunch bowl, but so good.Pumpkin pie oats with peanut butter and cashew yogurt swirled in.Roasted red pepper sandwich with hummus, guac, and lettuce.Oats with cinnamon apples and peanut butter. I’ll be sharing this recipe very soon.Spicy sweet potato, kale, and black bean soup over brown rice.Potato “nachos” with leftover bean chili, vegan queso, olives, salsa, lettuce, and cashew cream.Spaghetti with some cheesy chickpeas on top.Roasted veggies over brown rice with leftover vegan queso on top.Tofu scramble wrap with some hot sauce, salsa, vegan cheese, and lettuce.My husband made a pizza with vegan meatballs, kale, and cashew cheese.More oats with apples and peanut butter. I’m sorry for all the oats… I just really love them.Tortilla soup! The soup has a spicy tomato base with some red peppers, onions, corn, black beans, and soy protein.Just Egg sandwich with some tempeh bacon, avocado, and hot sauce.More jammy oats for me.My favorite bean & cheese enchiladas with some mexican rice & a side salad.
