I share a lot of my oat recipe on Instagram but not nearly as much as I should on here. I think I just assume it is too simple but honestly… these breakfasts are my favorite and they deserve a spot on here every once in a while. These apple cinnamon and peanut butter oats have been in repeat in my house. They are warm, fragrant, comforting, and so easy to pull together. It’s the perfect cold-weather breakfast.
Recipe
You will need:
- 1/3 cup rolled oats
- 2/3 cup water
- 1 tbsp ground flaxseed
- 1/4 cup non-dairy milk (I like oat milk)
- 1/2 tsp cinnamon for oats + 1/2 tsp cinnamon for apples
- 1 small apple, diced
- 1 tbsp maple syrup
- Water as neeeded
- 1-2 tbs peanut butter (or more, you do you)
To make:
- Place 1/3 cup oats and 2/3 water in a large microwave-safe bowl (so it doesn’t spill over while cooking). Cook for 4 minutes in microwave.
- Once done, stir in ground flax and 1/3 cup non-dairy milk and set aside.
- In a small sauce pot, add diced apple, a bit of water to cover the bottom of the pot and avoid sticking, maple syrup, and cinnamon. Stir and allow to cook down for about 10 minutes – checking on it to make sure it doesn’t burn on the bottom (add more water as needed).
- Add oatmeal to bowl, top with apples, and drizzle with peanut butter.
A healthy and filling breakfast in no time. There’s just something so wonderful about this combination. I hope you agree. x b
