Vegan Citrus Yogurt Pound Cake

Citrus Cake

Hi friends!

I don’t share a whole lot of baking recipes here but when I pull something together that I just love, I have to share. This cake is one of them.

I was inspired by this recipe by Holy Cow! I have modified it quite a bit, but thank you Vaishali for the inspiration.

This is officially my go-to pound cake recipe because it is THAT good. The texture is divine and it has a very subtle citrus flavor that I just love. I hope that you’ll agree.

I actually made this recipe because I needed to use up a whole lot of coconut yogurt before it went bad. So if you ever find yourself in that situation, this was the best possible solution.


Recipe

You will need:

  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 2 tbsp cornstarch
  • 1/2 tsp salt
  • 1/4 cup freshly squeezed lemon juice + zest from lemon
  • 1/4 cup freshly squeezed orange juice + zest from orange
  • 1 cup coconut sugar
  • 1/4 cup coconut oil, melted
  • 2 tbsp vegan butter, melted
  • 2 1/2 cups unsweetened coconut yogurt 

To make:

  • Preheat oven to 350 F.
  • In a small bowl, sift together flour, baking soda, baking powder, cornstarch, and salt. Set aside.
  • In a large bowl, grate zest from 1 lemon and 1 orange before adding fresh-squeezed juice from them both (about 1/4 cup each or 1/2 cup of juice in total).
  • Add coconut sugar, coconut oil, butter, and coconut yogurt. Stir well and quickly so that the coconut oil does not solidify.
  • Gently add dry ingredients to the wet, stirring in between to ensure minimal lumping.
  • Grease bundt pan well before adding the batter.
  • Bake at 350 F for about 45-55 minutes, or until cooked through. You can test with a toothpick – if it comes out clean, it is done!
  • Slice and serve.

I prefer my pound cake plain but if you want to get fancy, you could make a quick glaze with powdered sugar and more lemon or orange juice. Or you could lightly dust with some powdered sugar. You do you.

This is such a beautiful cake for a summer cookout or party, or anytime, really. It’s become a classic in our house.
