What My Plant-Based Kids Eat Hi friends :) It’s about that time for another look at what my plant-based kids eat. I hope you find a few ideas for yours. x Peanut butter and jelly, blueberries, and pea crisps with hummus. Banana nice cream for breakfast with a side of baked chocolate oats (leftover from the day before), and jammy berries. Tofu scramble, avocado toast, and berries. Gardein chik’n tenders with ketchup/mayo dip, blueberry crumble, veggies, and avocado toast. Crappiest quality photo, so sorry. But baked tofu nuggets, vegan mayo and ketchup, roasted cabbage and sweet potato, grapes, and choco chips for Willow (per her request). Dino popsicles! Recipe in my new ebook. The girls have their own preferences some days, and that’s okay! Willow didn’t want avocado for breakfast so she has toast with Earth Balance butter, peaches, and cashew yogurt. Fiona has avocado toast, bananas with pb, peaches, and cashew yogurt. Refried black beans, rice, hummus with sweet potato fries, and blueberries. My kids did not enjoy the black beans so I was glad to have the hummus backup. Red lentil pasta, strawberries, and mashed cinnamon sweet potato. Tofu scramble, watermelon, blueberries, and toast with vegan cream cheese. Oat and chickpea pancakes (recipe in my ebook), bananas with pb, and strawberries. Vegan cheese quesadillas, guacamole, refried black beans, and applesauce. Pasta with jarred sauce, apples with pb, and baked sticks. Applesauce for Fiona. PB & banana sandwiches, carrots, and annie’s bunny crackers. Chocolate oats with fruit of their choice. Into their oats, I always stir in some ground flaxseed and nut butter to bulk it up.
