Plant-Based Meal Ideas: What I’ve Been Eating Lately
Lots of whole foods plant-based meal inspiration coming ‘atcha. Basically… just lots of things served alongside vegan queso. LOL Just the best.
Really large burrito bowl for lunch!! Smothered in vegan queso and cashew lime crema (both recipes in my eBook)!Side salad with baby kale and spinach, cucumbers, and a vegan ranch dressing.Turmeric rice with corn and spinach, broccoli, and boiled potato topped with black beans and vegan queso.Baked sweet potatoes topped with bean chili and cashew sour cream. Side salad.Brown rice with veg, white beans, air-fried zucchini, sweet potato, and vegan queso. This was a hodge-podge lunch.Buffalo tempeh salad with cashew ranch dressing.Oats with shredded carrot, ground flax, almond extract, and cinnamon. Topped with frozen cherries.Fries with sweet chili sauce, baby kale, summer squash, and vegan queso. Can you tell that I eat a lot of vegan queso…? LOLAir-fried potatoes for dinner with steamed broccoli and you guessed it… queso. Ketchup, too!Buffalo tempeh and black bean wrap and a side of Japanese sweet potato.Potato hash with broccoli and queso. Side spinach.Corn tostadas with black beans, queso, sour cream. Some sweet potato, corn, and green beans.Hashbrowns and swiss chard.Steamed artichoke with lots of garlic.Potatoes doused in queso and sauteed spinach and chard.Tostadas with all the toppings.Steel cut oats with almond extract and cherries.Roasted red pepper pasta over spinach with a side of balsamic mushrooms and asparagus.Banana nice cream with date syrup swirl and toasted walnuts/pecans.
