Green smoothie with spinach, banana, mango, almond milk, date, and vanilla. Chickpea shakshuka with rice, green olives, and cashew sour cream. Banana and mango smoothie. Simple and so good. Cheesy hashbrowns with avocado and hot sauce. Couscous with garlicky broccoli rabe. Chocolate oat cake with banana nice cream. Thai mango curry with lots of veg and cashews over rice. Oats with pineapple and banana. Cheesy potatoes topped with avocado, hot sauce, and cashew sour cream. Sourdough toast with mashed white beans and avocado. Topped with cucumber. Spicy PB rice noodles with tempeh, cabbage, and carrots. For the PB dressing, I blend together: PB2 powder, rice vinegar, sriracha, maple syrup, and garlic powder with a bit of water to thin. Hashbrowns with queso and kechup. Chickpea eggs on corn tortillas with lettuce, avocado, hot sauce, and drizzle of cashew ranch. Cardamom oats and chocolate banana nice cream topped with a chocolate date syrup and strawberries. More hashbrowns and queso and a side of steamed cabbage.
