Vegan & Gluten Free Breakfast Fritters

Hi friends!

I am usually an oatmeal kind of girl most mornings, but lately I have been in my savory era. I randomly threw together these breakfast fritters using chickpea flour as my base and I loved them so much (and they took no time at all), that they are officially in my breakfast rotation. I love using chickpea flour in my kitchen because it is inexpensive, gluten free, and full of protein and fiber. The beauty of these is that you really can’t mess them up… whatever veggies or herbs you have on hand, they will more than likely be good in these fritters.

I used red pepper, scallion, carrots, and corn in these but I have also made them using cauliflower rice, peas, fresh rosemary, chives, and shredded zucchini and they were just as great. You can really add whatever you have to use up in your fridge!

I like to top mine with Trader Joe’s vegan tzatziki, avocado, and hot sauce… seriously delicious. They would also be great with salsa, vegan sour cream, cashew cream, sriracha. I’ve also enjoyed them between some GF bread. Endless ways to enjoy them and they also freeze very well!

So without me gushing about them any further, here’s the recipe. I hope you enjoy them! x


Recipe

Makes about 6 fritters

You will need:

  • 1/2 cup chickpea flour
  • 2 tbsp nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • Dash of turmeric
  • Pepper, to taste
  • About 1/2 cup or so of water to thin out (you want pancake batter consistency)
  • 2 tbsp diced red pepper
  • 2 tbsp corn
  • 1 tbsp shredded carrot
  • 1 tbsp sliced scallion (or onion of your choice)
  • 1 tbsp shredded vegan cheese (optional but delicious)
  • Cooking spray (if you are not using a non-stick pan)

To make:

  • In a bowl, add chickpea flour, nutritional yeast, garlic powder, salt, pepper, turmeric, pepper, and water. Whisk until everything is incorporated. Add more water if necessary to get the desired consistency.
  • Add your chopped veg and cheese and give it a toss so everything is coated.
  • Over medium heat, grease your griddle or pan if necessary before spooning into small rounds. Allow to cook until golden on the underside until flipping and doing the same to the other side. They can take a little time to cook through… I pressed them down a bit to make certain they were cooked through.
  • Serve with your favorite toppings and enjoy!
