Hi friends! Back with another round-up of what I have been eating lately. I feel like it looks like a lot of repeat meals because honestly, once I get onto something, I tend to crave it for a while and become a creature of habit. But I hope there is enough variety below to inspire you. x
GF bagel with kite hill chive cream cheese, tomato, and red onion.
Chickpea egg breakfast sandwich with hot sauce, herb cream cheese, spinach, onion on GF roll.
Thai red curry noodles and veg.
GF roll with avocado mash, tomato, red onion, salt, and balsamic glaze.
Red lentil and coconut curry over jasmine rice.
Rice bowl with zucchini and chickpeas.
More GF roll goodness topped with herb cream cheese, tomato, spinach, red onion… see… repetitive but so good.
Oat and chickpea pancakes topped with jammy berries.
Fruit salad snack.
GF roll with herb cream cheese and cucumber/tomato salsa type situation.
Creamy oats with berries and choco maple syrup.
Potato salad made with cashew cream, celery, and relish… side salad.
My favorite quick snack lately are cuties!
Salad topped with sauerkraut, avocado, cashew ranch dressing.
Corn tortilla nachos for one! I like mine with refried beans, queso , cashew sour cream, guac, hot sauce. Side salad.
This is THE BEST vegan chocolate I’ve had in a long time. Love having a square or five. LOL
Tostada’s topped with beans, queso, cashew sour cream, guac, hot sauce, lettuce…
My favorite ever . It’s like lava cake and ice cream… but good for you.
Brunch with family. I had a vegan sausage, just egg, and cheese wrap with a side of rice paper bacon. So good.
Broccoli and rice with spicy PB2 sauce. I just mix some PB2 with water, sriracha, lime juice, and a bit of maple syrup.
Cauliflower, sweet potato, and red lentil curry over rice.
More of my favorite breakfast. ;)
Cabbage, carrots, and chickpea in a creamy tomato broth. I love to make a batch of this soup to have throughout the week.
Homemade black bean and mushroom burgers on a GF bun and side of fries.
Tofu and vegetable curry over rice.
Toast with vegan cream cheese, tomato, red onion, and cucumbers with a side of veg for breakfast.
